Sourdough 201 >First Feeding


Day Two!
There should not have been much action in the jackson for the last 24 hours. Mix in with the day one dough and additional cup of bread flour and a half a cup of room temperature water. It's good to be doing this in the late evening so that it rests in the cool night and does it's thing as much as it can before getting another feeding. The dough will be softer and wetter, you can mix it in the gallon jar or take out day one and mix in a bowl. If you mix it in the jar, make sure it gets evenly distributed and the sides scraped down with a plastic spatula completely. Mark the level with a sharpie. Cover with plastic wrap and leave it on the counter for 24-36 hours.

Between today and tomorrow it may begin an off~ish strong smell. This will brighten as time goes on so don't be discouraged if your seed culture seems a bit funny. We're looking for a 50 percent rise, it may take some a little longer if it's colder in your kitchen. Mark it with your sharpie where a 50% rise will need to climb to. If you've got a gallon jar, it won't be much.

Tomorrow we'll be halving the starter seed. If you want to give it to someone to play catch-up they can start on day three with your discarded half.
